Ingredients

  • 1 cup light mayonnaise
  • 1 8-ounce container light sour cream
  • 5-6 artichoke hearts
  • ½ cup sun-dried tomatoes not oil-packed
  • 2 teaspoons minced garlic
  • ½ cup thinly sliced green onions
  • cup grated Asiago cheese
  • 1 tablespoon grated Parmesan cheese

Equipment

  • Oven
  • Wooden Spoon
  • Grater
  • Cutting Board
  • Baking Sheet
  • Mixing Bowl
  • Chef's Knife
  • Frying Pan

Method

  1. Preheat your oven to 350 degrees Fahrenheit and spray an 8 x 8 x 2-inch baking dish with non-stick cooking spray.
  2. In a medium bowl, combine the light mayonnaise, light sour cream, diced artichokes, sun-dried tomatoes, minced garlic, and thinly sliced green onions. Stir everything together until well blended.
  3. Now, fold in the grated Asiago cheese. Make sure it’s evenly distributed throughout the mixture.
  4. Pour the dip mixture into the prepared baking pan, smoothing it out evenly. Sprinkle the top with the grated Parmesan cheese.
  5. Place the baking dish in the preheated oven and let it bake for 30 minutes.
  6. Once done, take it out of the oven and let it cool slightly before serving. Serve the Asiago Dip warm with bruschetta, crackers, or a sliced baguette.

Notes

  • Tip 2: This dip can also be frozen. Just make sure to thaw it in the fridge before reheating.
  • Tip 3: Add in some cooked chopped spinach or artichokes to give it a different flavor profile.
  • Tip 4: This recipe is great for gatherings, but you can easily halve it for a smaller crowd.
  • Tip 5: Top the dip with fresh herbs like parsley or chives before serving for a pop of color.
