Method
- Preheat your oven to 400˚F.
- Season both sides of the chicken breast with Italian seasoning, salt, and black pepper.
- Heat half (1 tbsp) of olive oil in a large skillet over high heat. Once it is hot, add the chicken breast. Cook for 1 to 2 minutes on each side until golden brown.
- Add grape tomatoes, garlic, and feta cheese into the pan and drizzle the remaining olive oil over top.
- Bake for 15 to 20 minutes or until the chicken is cooked through (165˚F internal temp).
- Remove the chicken from the pan and stir the sauce, smashing the feta and tomatoes together. Mix in the heavy cream, crushed red pepper, and additional salt and pepper to taste, then return the chicken to the pan and cover it with sauce.
- Garnish with fresh basil if desired and serve hot with pasta, zoodles, spinach, garlic bread, or however you like it!
Notes
Store leftovers in an airtight container for up to three days. You can freeze the cooked Baked Feta Chicken for up to two months. Pair with a fresh salad or roasted vegetables for a complete meal.
