Ingredients

  • 2 pounds carrots peeled, trimmed, and cut in half lengthwise
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1.5 tablespoons honey
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried thyme or 1 1/4 teaspoons fresh thyme

Equipment

  • Wooden Spoon
  • Baking Sheet
  • Oven
  • Peeler

Method

  1. Preheat your oven to 425°F. This high temperature is crucial for achieving that perfect caramelization, which brings out the sweetness of the carrots.
  2. Place the carrots in a large bowl. Ensure they are evenly cut so they cook at the same rate.
  3. Drizzle the olive oil, balsamic vinegar, and honey over the carrots.
  4. Add the kosher salt, black pepper, and dried thyme.
  5. Toss until the carrots are evenly coated.
  6. Arrange the carrots in a single layer on a baking sheet.
  7. Roast the carrots for 20 minutes, or until they begin to caramelize.
  8. Take the baking sheet out, stir the carrots, then put them back in the oven for an additional 20-25 minutes.
  9. Transfer the carrots to a serving dish and serve warm.
