Ingredients

  • 3 lbs chicken drumsticks
  • 3 Tbsp mayonnaise
  • 2 Tbsp creamy horseradish
  • 1 Tbsp olive oil
  • 3 garlic cloves, minced
  • 1 onion, sliced
  • 1.5 tsp salt
  • 1 tsp paprika
  • 0.5 tsp pepper
  • 0.5 cup barbecue sauce

Equipment

  • Baking Sheet
  • Oven
  • Chef's Knife
  • Mixing Bowl

Method

  1. Preheat your oven to 400°F. This high temperature will help attain that golden-brown, crispy skin.
  2. In a large bowl, combine mayonnaise, horseradish, olive oil, garlic, salt, paprika, and pepper. Mix well to form a marinade that’s creamy and flavorful.
  3. Pour the marinade over the chicken drumsticks, ensuring they are well-coated. Feel free to get in there with your hands to really mix it all together.
  4. Add the sliced onion into the mix and stir again to distribute evenly. Cover the bowl and refrigerate for at least 3 hours or overnight for deeper flavor.
  5. When you're ready to cook, line a baking sheet with parchment paper (this will make cleanup a breeze) and lay out the marinated drumsticks. Discard the onions.
  6. Bake the drumsticks in the preheated oven for about 35 minutes. You’ll notice the skins becoming crispy and golden brown. This baking time may slightly vary depending on the size of your drumsticks.
  7. Once they’re looking deliciously crispy, take them out and coat them generously with your barbecue sauce. Make sure each one gets a nice glaze.
  8. Return the drumsticks to the oven and bake for another 10 to 15 minutes. This will allow the sauce to caramelize and create that delicious sticky texture.
  9. When they’re done, let the drumsticks rest for a few minutes before serving. This helps the juices redistribute, keeping the meat tender and juicy.
  10. Serve hot and enjoy the crunch of the skin paired with the juicy meat and rich barbecue flavor!
