Ingredients

  • 1 medium Beetroot roasted, boiled, or steamed
  • 1 15 ounce Canned chickpeas drained, or 1 ½ cups of cooked chickpeas
  • 2 cloves Garlic
  • 1-2 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • ¼ teaspoon Ground black pepper
  • ¾ teaspoon Salt

Equipment

  • Food Processor

Method

  1. Begin by preparing your ingredients. If you haven’t yet roasted, boiled, or steamed your beetroot, do that first. It’s important to have it cooled down for blending. The vibrant color will infuse into your dip, making it look irresistible.
  2. Next, grab your food processor and add the cooled beetroot, canned chickpeas, garlic, tahini, lemon juice, and olive oil. Don’t forget to sprinkle in the ground black pepper and salt to enhance the flavors. This combination creates the foundation for your hummus.
  3. Blend the mixture on high speed until it reaches a smooth and creamy consistency. This usually takes about five minutes. If it feels too thick, add a tablespoon of water at a time and blend again until you achieve your desired texture.
  4. Once blended, taste your hummus! This is your chance to adjust the seasoning. If you prefer a bolder garlic flavor, add more garlic or a touch more salt if necessary. It’s all about personal preference.
  5. Now, it’s time to serve! Transfer your beautifully blended Beet Hummus into a bowl. Drizzle a bit of olive oil on top for added richness and a glossy finish.
  6. For garnishing, consider adding pomegranate seeds, fresh herbs, nigella seeds, or sesame seeds. They not only enhance the presentation but also add a delightful texture contrast.
  7. Finally, serve your Beet Hummus alongside toasted pita chips or veggie sticks like celery, cucumber, or carrot. It’s a colorful, healthy, and satisfying snack!
