- 1. Place the chickpeas in a medium saucepan and sprinkle with baking soda. Fill the pot with enough water to cover the chickpeas by several inches. - 3. Add all the ingredients to your food processor, except for the chickpeas and ice cubes. Process for about 2 minutes until well blended.
- 4. Now, add the cooked and drained chickpeas along with the 2 ice cubes to the processor. Process for 4 minutes—yes, 4 full minutes, no less! This is crucial for achieving that silky smooth consistency.
- 5. If the mixture seems too thick, you can add additional water, one tablespoon at a time, until you reach your desired consistency.
- 6. Next, taste your hummus and season with more salt or lemon juice if needed. It’s all about making it perfect for your palate.
- 7. Serve your hummus in a bowl, drizzling with a bit more extra virgin olive oil and sprinkling with a dash of paprika or sumac. Feel free to add fresh herbs for extra flavor!
