  • 1/2 teaspoon baking soda
  • 1/3 cup tahini well stirred
  • 1/4 cup fresh lemon juice
  • 2 tablespoons extra virgin olive oil plus more for serving
  • 2 cloves garlic minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt plus more to taste
  • 2 ice cubes
  • Dash ground paprika or sumac, fresh herbs and extra virgin olive oil for serving

Method
 

  1. 1. Place the chickpeas in a medium saucepan and sprinkle with baking soda. Fill the pot with enough water to cover the chickpeas by several inches. Bring it to a boil over medium-high heat, then reduce the heat to a simmer. Cook until the chickpeas are soft and the skins are popping off, about 15 to 20 minutes.
  2. 2. Once the chickpeas are cooked, drain them in a fine mesh strainer and rinse under cool water. Pick out any skins that have popped off. Don’t worry if you can’t get them all; it’s all about the creamy texture.
  3. 3. Add all the ingredients to your food processor, except for the chickpeas and ice cubes. Process for about 2 minutes until well blended.
  4. 4. Now, add the cooked and drained chickpeas along with the 2 ice cubes to the processor. Process for 4 minutes—yes, 4 full minutes, no less! This is crucial for achieving that silky smooth consistency.
  5. 5. If the mixture seems too thick, you can add additional water, one tablespoon at a time, until you reach your desired consistency.
  6. 6. Next, taste your hummus and season with more salt or lemon juice if needed. It’s all about making it perfect for your palate.
