Ingredients
  

  • 8 ripe medium tomatoes seeds removed and chopped
  • 1 tablespoon olive oil
  • 1/3 cup chopped fresh basil
  • to taste Kosher salt
  • to taste black pepper
  • 1 French baguette cut into 1/2-inch thick slices
  • for brushing bread olive oil Olive oil
  • 2 cloves garlic peeled

Method
 

  1. Preheat oven to 450 degrees F.
  2. In a medium bowl, combine the tomatoes, 1 tablespoon olive oil, basil, salt, and pepper. Let sit while you toast the bread.
  3. Place the baguette slices on a large baking sheet. You might need to use two sheets. Brush the tops of the baguette slices with olive oil.
  4. Place the baking sheets in the oven and bake until bread slices are toasted, about 5 minutes.
  5. Remove from the oven and rub the garlic over the toasted bread, pressing slightly into the bread.
  6. Top each bread slice with tomato basil topping. Season with additional salt and black pepper and balsamic, if desired.

Notes

  • Tip 1: You can also toast the bread slices on the grill outside or on a grill pan.
