Ingredients

  • 1 bag Nacho Cheese Doritos 14.5 oz
  • 2 cups shredded pepper jack cheese
  • 2.5 cups chopped cooked chicken
  • 0.5 cup buffalo wing sauce
  • 4 jalapeños sliced

Equipment

  • 10-inch Skillet
  • Rimmed Baking Sheet

Method

  1. Preheat your oven to 400ºF. This is crucial for achieving that melty cheese texture you desire. A hot oven will help the cheese melt beautifully, giving you that gooey goodness that is essential for nachos.
  2. Line a rimmed baking sheet with aluminum foil. Not only does this make for easy cleanup, but it also prevents the nachos from sticking to the pan, ensuring that each bite comes off easily.
  3. In a large bowl, toss the chopped cooked chicken with the buffalo wing sauce. Make sure every piece of chicken is coated well, as this will infuse the nachos with flavor.
  4. Next, heat a non-stick skillet over medium heat. Add the sauced chicken and cook for about 3 to 4 minutes. This step helps the buffalo sauce to adhere better to the chicken and also warms it up, making it even more delicious.
  5. Once the chicken is ready, it’s time to layer your nachos. Start by placing half of the Doritos in a single layer on the prepared baking sheet. This will be the base of your nacho masterpiece.
  6. Now, sprinkle half of the pepper jack cheese over the Doritos. The cheese is going to melt and create a delicious cheesy layer.
  7. Top the cheese with half of the chicken mixture, followed by half of the sliced jalapeños. Make sure to distribute them evenly for a balanced flavor in every bite.
  8. Repeat the layering process with the remaining Doritos, cheese, chicken, and jalapeños. The more layers you have, the more flavor-packed your nachos will be!
  9. Finally, bake the nachos in the preheated oven for about 10 minutes or until the cheese has melted and is bubbling. This is the moment when all the ingredients come together, and your kitchen will smell amazing!

Notes

  • Tip 1: Store leftovers in an airtight container in the fridge for up to 2 days. However, nachos are best enjoyed fresh!
  • Tip 2: I don’t recommend freezing nachos once assembled, but you can freeze leftover chicken and sauces for future use.
  • Tip 3: Serve with a refreshing side salad or some guacamole to balance the heat from the buffalo wing sauce.
  • Tip 4: If you love heat, add more jalapeños or drizzle additional hot sauce on top before serving.
  • Tip 5: Consider serving the nachos on a large platter with individual dipping bowls for ranch dressing. This makes for a fun and interactive experience!
  • Tip 6: Feel free to experiment with different cheeses; cheddar or Monterey Jack also work wonderfully.
