  • 1/2 cup Cocoa Powder
  • 2 tablespoons Honey
  • 4 whole Eggs
  • 2 cups White Sugar
  • 1 3/4 cups Flour
  • 1/2 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Chopped Walnuts or Pecans
  • 10 tablespoons Unsalted Butter, Softened
  • 4 ⅔ cups Powdered Sugar
  • 2 tablespoons Light Corn Syrup
  • 1/4 cup Milk
  • dash none Salt
  • 1/2 teaspoon Peppermint Extract
  • 1-2 drops Green Food Coloring
  • 1/3 cup Cocoa

Method
 

  1. Preheat your oven to 350 degrees. This step is crucial as it ensures the brownies bake evenly and achieve the perfect texture.
  2. Melt butter and mix in cocoa powder. Stir until smooth and let it cool for a few minutes. This melted mixture will form the base of your brownies.
  3. Once cooled, add honey, eggs, white sugar, flour, baking powder, and salt. Mix well until all ingredients are fully combined, creating a smooth batter.
  4. Incorporate the chopped walnuts or pecans into the batter, giving it a delightful crunch.
  5. Pour the brownie batter into a greased or parchment-lined 9-by-13 inch baking pan. Spread it evenly using a spatula to ensure uniform baking.
  6. Bake in the preheated oven for 20 to 25 minutes. Keep an eye on them; you want them to be set but still fudgy in the center.
  7. Once baked, cool the brownies completely in the pan on a wire rack. This step is essential for cutting clean squares later.
  8. To prepare the frosting, beat butter, powdered sugar, corn syrup, milk, and salt in a medium bowl on low speed until just combined. Then, increase to high speed until fluffy.
  9. If the frosting is too thick, add more milk until it's spreadable but not runny.
  10. Divide the frosting in half. In one bowl, stir in peppermint extract and green food coloring for the mint frosting, and leave the other half as chocolate frosting.
  11. Spread the mint frosting over the cooled brownies. Place the brownies in the freezer for a short while to stiffen the icing—a very important step!
  12. Once the mint frosting is set, remove the brownies from the freezer and carefully add a layer of the chocolate frosting.
  13. To make the chocolate frosting, mix in cocoa until smooth and creamy.
  14. Refrigerate the brownies until the frosting is firm. Finally, cut them into squares and serve!
