Preheat your oven to 375ºF. While the oven is heating, line your baking sheets with parchment paper. This makes for easy cleanup and helps prevent sticking.
If you're using frozen chicken fingers, cook them according to the package directions. Once they’re cooked, use a sharp knife to chop the chicken into small, bite-sized pieces. This will make it easier to fill the crescent rolls.
In a mixing bowl, combine the chopped chicken, cheddar cheese, and chicken finger dipping sauce. Stir well until everything is evenly coated. Set this mixture aside while you prepare the dough.
Unroll each can of crescent rolls onto a clean surface. Carefully press the perforations together to seal the seams. This will create a solid sheet of dough for each roll.
Using a sharp knife or pizza cutter, cut each sheet into 8 equal squares. You'll have a total of 16 squares to fill.
Spoon a generous amount of the chicken mixture onto the center of each dough square. Be careful not to overfill, as you need to be able to seal the edges without spilling the filling.
Now, bring the four corners of each dough square up over the filling. Pinch the edges firmly to seal, ensuring that no filling escapes during baking. Place the sealed bites seam-side down on your prepared baking sheets.
Once all the bites are assembled, place the baking sheets in the preheated oven. Bake them for 18 to 20 minutes or until they’re golden brown and puffed up. The smell in your kitchen will be heavenly!
After baking, let the bites cool for a few minutes. This will make them easier to handle and will help the filling set a bit before serving.
