  • 2 cups Bocconcini cheese
  • 1 cup Fresh basil leaves
  • 1/4 teaspoon salt and pepper
  • 1/2 cup Moroccan olive oil
  • 1/4 cup balsamic syrup or balsamic vinegar
  • 1 pinch Chilli flakes
  • 1/2 cup Garlic Croutons homemade or store bought
  • 1/4 cup basil leaves torn

  1. Start by preparing your bamboo skewers. I find that six-inch thick bamboo skewers work best. Avoid using thin ones, or those that are too long, as they can make it challenging for the salad to stay securely on.
  2. Begin the assembly by skewering one baby tomato. I like to fold a basil leaf in half and place it right next to the tomato. The basil adds a lovely aroma and flavor that complements the tomato.
  3. Next, add a piece of bocconcini cheese after the basil leaf. The creamy texture of the cheese paired with the tomato creates a delightful contrast.
  4. Continue layering another baby tomato, followed by another folded basil leaf, and another piece of bocconcini cheese. This repetition ensures that every bite is a harmonious blend of flavors.
  5. Repeat the process until you've finished all your skewers. Arrange them on a platter for a beautiful presentation.
  6. Season the skewers lightly with salt and pepper. You can drizzle Moroccan olive oil over the top for added richness.
  7. If you like a bit of spice, sprinkle some chilli flakes on the skewers. They add a nice kick to the dish.
  8. Serve with a bowl of balsamic vinegar on the side for dipping, or drizzle the balsamic syrup directly over the skewers for a touch of sweetness.
