Ingredients
  

  • 1 package Red Lobster Cheddar Bay Biscuit mix
  • ¾ cup cold water
  • ½ cup shredded cheddar cheese
  • ¼ cup melted butter
  • 1 skillet 10-inch skillet of cornbread
  • 1 sleeve saltine crackers
  • 5 large eggs, slightly beaten
  • 3 stalks celery, chopped
  • 1 medium onion, chopped
  • 1 tsp dried sage
  • 2 tsp poultry seasoning
  • salt and pepper, to taste
  • 5 can chicken broth

Method
 

  1. Preheat your oven to 425ºF. This initial heat will help your biscuits rise perfectly, setting the stage for your stuffing.
  2. Line a cookie sheet with parchment paper for easy cleanup. This is where you'll prepare the Cheddar Bay Biscuits, so it’s important to have a clean surface.
  3. Prepare the Cheddar Bay Biscuits according to the package directions. Mix together the biscuit mix, cold water, and shredded cheddar cheese until a soft dough forms. The dough should be moist and slightly sticky.
  4. Using a large cookie scoop, scoop the biscuit dough onto the prepared pan. You want them to be spaced apart so they can rise evenly. Bake for about 14 to 16 minutes or until golden brown on top.
  5. While the biscuits are baking, melt the butter in a small saucepan. Combine the melted butter with the seasoning packet from the biscuit mix and mix well. This will create a fragrant, flavorful butter that will enhance your stuffing.
  6. Once the biscuits are done, remove them from the oven and let them cool slightly. Then, brush your butter mixture generously over the top of each biscuit, allowing the flavor to soak in.
  7. Increase the oven temperature to 450ºF. This higher heat is perfect for baking your stuffing evenly. Lightly spray two 9×13-inch baking dishes with cooking spray.
  8. In a large bowl, crumble the baked cornbread, cooled biscuits, and saltine crackers. You want a mixture that is coarse but not too fine; this will give your stuffing a great texture.
  9. Add the remaining ingredients: chopped celery, onion, eggs, dried sage, poultry seasoning, and the chicken broth. Stir well until everything is combined. The mixture will be very wet, which is perfect for stuffing.
  10. Pour the prepared mixture into the greased baking dishes. Spread it out evenly and press down gently to compact it. This ensures it bakes evenly and develops a nice crust on top.
  11. Bake for 40 to 45 minutes, or until the stuffing is golden brown and a bit crispy on the edges. As it bakes, the flavors will meld beautifully, filling your home with mouthwatering aromas.
