Ingredients

  • 4 pieces boneless and skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried basil
  • 1 teaspoon salt divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 ounces cream cheese softened
  • 1/4 cup grated Parmesan
  • 1/3 cup grated mozzarella cheese
  • 1 1/2 cups fresh spinach chopped
  • 2 teaspoons garlic minced
  • 1/4 teaspoon red pepper flakes or to taste

Equipment

  • Air Fryer
  • Wooden Spoon
  • Mixing Bowl
  • Grater
  • Skillet
  • Chef's Knife

Method

  1. Start by patting the chicken breasts dry. This helps the seasoning adhere better and ensures a crispier finish. Place them on a cutting board, ready for the next step.
  2. Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Be sure not to cut all the way through; you want enough space to hold the filling.
  3. Brush both sides of the chicken breasts with olive oil. This not only helps with browning but also adds flavor.
  4. In a small bowl, combine the paprika, 1/2 teaspoon salt, garlic powder, basil, and onion powder. Mix well to create an even seasoning.
  5. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts. Use your hands to rub it in, ensuring every inch is flavored.
  6. In a medium bowl, create the stuffing by combining the cream cheese, mozzarella, Parmesan, spinach, garlic, red pepper flakes, and the remaining salt. Stir well until everything is fully blended.
  7. Stuff each chicken breast with the cheese mixture, ensuring they are filled but not overflowing. You want to seal in that cheesy goodness!
  8. Transfer the stuffed chicken breasts into a greased air fryer basket in a single layer. If your air fryer is small, you may need to cook in batches.
  9. Air fry at 375 degrees for 15 to 20 minutes. The internal temperature should reach 165 degrees, and the chicken should be golden brown and crispy on the outside.
  10. Once cooked, cover the chicken with foil while you prepare the next batch, if applicable. This keeps it warm and succulent until serving.

Notes

For best results, store leftovers in an airtight container in the fridge for up to three days. Reheat in the air fryer for that crispy texture!
