Ingredients
  

  • 1 onion sliced thin
  • 1 bell pepper sliced (any color/s)
  • 2 tablespoons olive or vegetable oil
  • 2 medium chicken breasts cut into thin 1/4'' slices
  • 1 teaspoon creole, Italian or taco seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 8 slices provolone cheese
  • 1/4 cup light mayo or sour cream
  • 4 hoagie rolls

Method
 

  1. In a large skillet, heat about 1 tablespoon of olive oil over medium-high heat. Add the bell pepper and onion slices. Cook until soft, stirring occasionally, for about 4 to 5 minutes. Look for a golden color on the edges of the vegetables, indicating they are perfectly sautéed. Once they are soft, remove from the pan onto a clean plate.
  2. Add another tablespoon of olive oil to the same skillet and heat it up again. Stir in the chicken slices along with your choice of seasoning. Cook until the chicken is cooked through and browned, about 4 to 5 minutes. The chicken should be no longer pink in the center and have a lovely golden crust.
  3. Return the sautéed peppers and onions to the skillet with the chicken. Mix everything together, allowing the flavors to meld. The aroma will be delightful and make your mouth water!
  4. Spread light mayo (or sour cream) generously inside each hoagie roll. This adds creaminess and ensures that the sandwich is moist.
  5. Fill each roll with the chicken and pepper mixture, making sure to pack it generously. You want every bite to be bursting with flavor!
  6. Top each filled roll with 2 slices of provolone cheese. As the cheese melts, it will become gooey and delicious, enhancing the whole experience.
  7. Preheat your broiler. Place the assembled sandwiches on a baking sheet and broil them in the oven until the cheese is melted and bubbly, roughly 2 to 3 minutes. Keep a close eye on them to avoid burning!
