  • 3 cups chopped roasted chicken breast
  • cup chopped green onion
  • ¼ cup chopped smoked almonds
  • ¼ cup plain yogurt
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chopped fresh rosemary
  • teaspoon salt
  • teaspoon freshly ground black pepper
  • 10 slices whole grain bread
  • 5 lettuce leaves

Method
 

  1. In a large bowl, combine chopped roasted chicken breast, chopped green onion, chopped smoked almonds, plain yogurt, mayonnaise, Dijon mustard, chopped fresh rosemary, salt, and freshly ground black pepper. Stir well until all the ingredients are evenly coated and blended.
  2. Once the mixture is combined, cover the bowl with plastic wrap or a lid and chill it in the refrigerator for about an hour. This chilling time allows the flavors to meld beautifully, enhancing the overall taste.
  3. After chilling, take out the chicken mixture and prepare your whole grain bread. Lay out five slices on a clean surface, ready for assembly.
  4. Divide the chilled chicken mixture evenly between the five slices, making sure to spread it out to the edges for maximum flavor in every bite.
  5. Next, add a few lettuce leaves on top of the chicken mixture on each slice. This will add a nice crunch and freshness to each sandwich.
  6. Now, take the remaining five slices of bread and place them on top of the sandwiches, pressing gently to hold everything together.
