Ingredients
  

  • 1 pound chicken breast boneless, skinless, about 4 fillets
  • 1/2 pound Brussels sprouts quartered
  • 2 red onions quartered
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon dried rosemary
  • 1 sea salt Dash
  • 1 ground black pepper Dash

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a large mixing bowl, combine all the ingredients: the chicken fillets, quartered Brussels sprouts, and red onions. Drizzle the olive oil and balsamic vinegar over the top, then sprinkle with dried rosemary, sea salt, and ground black pepper. Use your hands to toss everything together, making sure the chicken and vegetables are evenly coated with the seasonings.
  3. Once everything is well mixed, spread the mixture evenly onto a baking sheet.
  4. Place the baking sheet in the preheated oven and bake for 25 minutes. Halfway through, at about the 12-minute mark, take the sheet out and give everything a gentle stir.
  5. After 25 minutes, check that the chicken is cooked through and the Brussels sprouts are tender.
  6. Once done, remove the tray from the oven and let it sit for a few minutes to cool slightly.
