Ingredients
  

  • 2 cups cooked buckwheat Note: 1 cup raw buckwheat = 2 cups cooked
  • 2 chicken breasts
  • 5 oz fresh spinach
  • 1/2 medium head of broccoli
  • 1 small onion
  • 1 large egg
  • 1 Tbsp sour cream or mayo
  • 1/4 cup plain bread crumbs we used Panko
  • Salt to taste
  • pepper to taste
  • 1 cup Italian bread crumbs to coat finished patties
  • Oil to sauté, we used Extra Light olive oil

Method
 

  1. Cut broccoli into florets and pulse in a food processor until finely chopped then transfer to a large mixing bowl.
  2. Chop and sauté spinach on a hot skillet with 1 Tbsp oil for a few minutes or just until soft, then add to the same mixing bowl.
  3. In the bowl of a food processor (or using a meat grinder), grind together buckwheat and chicken breasts then transfer to the mixing bowl.
  4. Finely dice/mince onion (a food processor makes it easy) and add to the mixing bowl.
  5. Finally, add 1/4 cup panko bread crumbs, 1 egg, and 1 Tbsp of sour cream or mayo. Season with salt and pepper to taste (we used 1/2 tsp salt, 1/4 tsp pepper) then thoroughly mix until combined.
  6. Form oval patties, dip them on both sides in Italian bread crumbs and cook on a well-oiled skillet over medium heat, flipping 4-5 times during the process until cooked through.

Notes

  • Tip 1: Store leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to regain their crispy texture.
  • Tip 2: You can freeze the uncooked patties before frying. Just layer them between parchment paper and keep them in a freezer-safe bag for up to 3 months.
  • Tip 3: Serve with a fresh garden salad or a yogurt-based sauce for dipping. These patties also go well in a sandwich.
  • Tip 4: Try adding different spices like cumin or coriander for an exciting twist. You can also swap out buckwheat for quinoa or rice.
  • Tip 5: For a lighter meal, bake the patties in the oven instead of frying. They will still be delicious!
