Ingredients
  

  • 1 tablespoon olive oil
  • 16 ounces lean ground chicken
  • ½ medium sweet onion finely chopped
  • 2 medium garlic cloves minced
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • 4 ounces Gruyere cheese grated
  • salt
  • pepper
  • 18 medium-sized baby bella (or white button) mushrooms
  • 3 tablespoons breadcrumbs

Method
 

  1. Preheat your oven to 350°F.
  2. In a large skillet, add a drizzle of olive oil over medium heat.
  3. Then, add the ground chicken and cook it for 4 to 5 minutes until it's cooked through.
  4. Add the onions, garlic, and spices, and continue to cook for a few minutes.
  5. Once the chicken is cooked and the veggies are softened, season the mixture with salt and pepper.
  6. Remove the mixture from the heat and stir in the cheese.
  7. To prep the mushrooms, rinse them well and pat them dry.
  8. Then use a sharp paring knife to hollow out the center of each mushroom.
  9. Fill the mushrooms with the chicken mixture.
  10. Place the stuffed mushrooms in a baking dish.
  11. When all mushrooms are stuffed, sprinkle each with breadcrumbs.
  12. Bake for 25 to 30 minutes until breadcrumbs are browned.
  13. Serve while warm.

Notes

  • Use 99% fat free ground turkey: If counting WW points, this is a great option!
