Ingredients
  

  • 1 lb chicken skinless breast, cut into bite-sized cubes
  • 1 tsp white pepper
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • to taste Salt
  • 2 tbsp oil
  • 1 tsp garlic, minced
  • 1.5 cups broccoli florets
  • 0.5 cup yellow onions, sliced
  • 4 oz dried rice noodles
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp white pepper
  • to taste Salt
  • 1 tbsp sesame seeds
  • 1 tbsp green onions, chopped

Method
 

  1. In a bowl, add the chicken breast cubes along with the white pepper, soy sauce, cornstarch, and a pinch of salt. Mix well to ensure the chicken is fully coated. Allow it to marinate for at least 30 minutes.
  2. Prepare your rice noodles according to the package directions. Once cooked, drain and set aside.
  3. Heat a cast iron pan or skillet over medium-high heat. Add the oil and let it get hot. Then, toss in the minced garlic. Sauté for about a minute until the garlic is fragrant.
  4. Now, it’s time to add in the marinated chicken cubes. Cook for about 3 to 4 minutes, stirring occasionally, until the chicken is browned and cooked through.
  5. Add the broccoli florets and yellow onions into the pan. Stir and cook for 2 minutes, just until the broccoli is bright green and tender-crisp.
  6. Next, add the cooked rice noodles to the pan. Drizzle in the soy sauce, Worcestershire sauce, rice vinegar, additional salt, and a sprinkle of white pepper. Toss everything together until well combined.
  7. Continue to stir-fry for another 2 minutes, allowing the flavors to meld together.
  8. Finally, remove the pan from heat and garnish with green onions and sesame seeds. This adds a lovely crunch and a pop of color to your dish.

Notes
