Ingredients

  • 2 cups shredded rotisserie chicken (or leftover chicken)
  • 1 cup cooked white rice (minute rice works great here)
  • 1 can black beans rinsed and drained
  • 1 can mild red enchilada sauce
  • 1 cup corn kernels (from a can or frozen)
  • 1/2 cup sour cream
  • 1/3 cup sliced green onions
  • 1 teaspoon ground cumin
  • 2 1/2 cups cheddar cheese divided
  • Tortilla chips for dipping

Equipment

  • Wooden Spoon
  • Mixing Bowl
  • Oven
  • Chef's Knife
  • Baking Sheet

Method

  1. Preheat your oven to 350 degrees. This sets the stage for the perfect melting of the cheese and warming of all the ingredients.
  2. In a large bowl, combine all of the ingredients except for the cheddar cheese. Make sure to mix them well so that every ingredient is evenly distributed.
  3. Stir in 1 ½ cups of the cheddar cheese. This will give the dip a delicious cheesy base.
  4. Pour the mixture into a deep dish pie plate or another 9-inch baking dish. Spread it evenly to ensure even heating and melting of the cheese.
  5. Sprinkle the remaining cheddar cheese on top. This is where the magic happens - we want that gooey, melty layer on top.
  6. Bake for 15 to 20 minutes or until the cheddar cheese is melted and the dip is hot and bubbly. Keep an eye on it; you want it just right!
  7. Once done, remove from the oven and let it cool slightly before serving. This ensures you don’t burn your mouth on the hot cheese!
  8. Serve with tortilla chips. Enjoy dipping and sharing this delightful dish with everyone. It’s a hit!
  9. Leftovers? They’re great rolled up in tortillas for a quick meal the next day. Trust me, you’ll love it!

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best results.
  • Freezing: Yes, you can freeze the dip! Just be sure to store it in a freezer-safe container. Thaw it in the fridge before reheating.
  • Pairing: This dip pairs wonderfully with fresh veggies like sliced bell peppers or celery for a lighter option.
  • Spice Level: Adjust the spice level by adding jalapeños or hot sauce. It’s all about personal preference!
  • Meal Prep: Consider making this dip ahead of time for parties. It can be assembled the day before and baked right before serving.
