Method
- Start by heating the olive oil in a large pan over medium heat. You want the oil to shimmer slightly, indicating it’s hot enough to cook.
- Add the cubed chicken to the pan, spreading it out evenly. This ensures that each piece cooks through without steaming. Sauté the chicken for about 6 to 8 minutes, stirring occasionally, until it’s golden brown and cooked through.
- While the chicken cooks, take a moment to prepare your toppings. Halve the cherry tomatoes and slice the avocado into thin pieces. Set them aside; they’ll add freshness and color.
- Once the chicken is finished cooking, remove it from the heat and let it cool for a couple of minutes. This will make assembling the cups easier.
- In a large bowl, combine the cooked chicken, cherry tomatoes, and avocado. Drizzle the caesar dressing over the mixture, using just enough to coat everything evenly.
- Gently toss the mixture until everything is well combined. You want to make sure that the chicken is evenly distributed with the tomatoes and avocado.
- Now it’s time to assemble! Take a leaf of romaine and spoon in a generous amount of the chicken mixture. Don’t be shy; fill it up!
- After filling each leaf, sprinkle the parmesan cheese generously on top. This adds a wonderful salty flavor that complements the chicken and dressing.
- Serve the Chicken Caesar Lettuce Cups immediately while the ingredients are fresh and vibrant. Enjoy them with your friends or family, and watch how quickly they disappear!
Notes
These cups are best served fresh. Store any leftovers in an airtight container in the fridge. They’re best eaten within a day for optimal freshness.
