Method
- In a large bowl, combine all of the ingredients (except tortillas) until well blended.
- Spread about ½ cup of the mixture over the entire surface of a tortilla.
- Roll up tightly.
- Repeat with remaining tortillas.
- Refrigerate until firm, at least 30 minutes.
- Also, if you chill longer they will be easier to cut.
- Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.
Notes
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. They’re equally delicious cold.
- Freezing: You can freeze the roll ups before slicing. Just wrap them tightly in plastic wrap and foil for up to 3 months.
- Variations: Experiment with different fillings such as black beans, corn, or even different types of cheese for a twist.
- Garnishing: Top with fresh cilantro or sour cream when serving for added flavor and presentation.
- Make it Spicy: Add jalapeños or a dash of hot sauce to the filling for extra heat.
