Ingredients
  

  • 2 packages cream cheese softened
  • 1.5 cups shredded Mexican cheese
  • 2 tablespoons Old El Paso taco seasoning
  • 2 cups shredded chicken (rotisserie chicken works well)
  • 1 can diced tomatoes with green chilies, drained
  • 1 teaspoon minced garlic
  • 4 green onions sliced
  • 0.5 cup chopped cilantro
  • 8 burrito sized tortillas

Equipment

Method
 

  1. In a large bowl, combine all of the ingredients (except tortillas) until well blended.
  2. Spread about ½ cup of the mixture over the entire surface of a tortilla.
  3. Roll up tightly.
  4. Repeat with remaining tortillas.
  5. Refrigerate until firm, at least 30 minutes.
  6. Also, if you chill longer they will be easier to cut.
  7. Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. They’re equally delicious cold.
  • Freezing: You can freeze the roll ups before slicing. Just wrap them tightly in plastic wrap and foil for up to 3 months.
  • Variations: Experiment with different fillings such as black beans, corn, or even different types of cheese for a twist.
  • Garnishing: Top with fresh cilantro or sour cream when serving for added flavor and presentation.
  • Make it Spicy: Add jalapeños or a dash of hot sauce to the filling for extra heat.
