  • 8 oz Fettuccine
  • 0.5 lb Chicken, cut into pieces
  • 1 tbsp Olive Oil
  • 1 Garlic Clove, finely chopped
  • 16 oz Roasted Peppers jar
  • 0.5 cup Half & Half (or heavy cream)
  • 0.25 cup Chopped Fresh Parsley
  • Salt and Pepper
  • Grated Parmesan Cheese to garnish

Method
 

  1. Start by prepping your ingredients. Gather all your chicken, fettuccine, and other components. It makes the cooking process smoother.
  2. Bring a large pot of water to a boil. Once boiling, add the fettuccine and cook according to the package instructions until al dente. Drain, rinse with cold water, and set aside. This step ensures your pasta doesn't stick together.
  3. While the pasta is cooking, chop half of the roasted peppers into small pieces. Take the rest of the peppers from the jar and add them to a food processor with the liquid.
  4. Blend the peppers until smooth. This will create a vibrant sauce that will coat your fettuccine.
  5. In a large, non-stick pan, heat the olive oil over medium heat. Add the chopped chicken and cook for about 5 minutes until it’s browned and cooked through. Season with salt and pepper to taste.
  6. Once the chicken is ready, add the finely chopped garlic to the pan. Cook for about 30 seconds until fragrant.
  7. Stir in the blended roasted peppers and half & half. Allow it to simmer for about 10 minutes, stirring occasionally. You’ll want the sauce to thicken as it cooks.
  8. Add the cooked fettuccine and chopped parsley to the pan. Toss everything together until the pasta is well coated with the sauce.
