Ingredients
  

  • 2 eggs slightly whisked
  • 2/3 cup all-purpose flour
  • Salt to taste
  • 2 3/4 cups panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 3/4 teaspoon paprika
  • 3 large chicken breasts cut into strips
  • Olive oil cooking spray

Method
 

  1. Preheat your oven to 400°F. Line a baking tray with parchment paper and lightly spray with olive oil.
  2. Prepare three shallow bowls: place the whisked eggs in one; mix the flour with salt and pepper in another; and combine the panko breadcrumbs, Parmesan, and paprika in the third.
  3. Pat the chicken strips dry. Dredge each piece in flour, dip it in the egg, and then coat it with the breadcrumb mixture. If you have extra breadcrumbs, you can double-coat some of the pieces to ensure they are fully covered. Place the strips on the baking tray, making sure they are spaced apart.
  4. Mist the coated chicken with olive oil cooking spray. Bake in the preheated oven for 15-20 minutes, or until golden brown and the internal temperature hits 165°F. If you prefer them extra crispy, broil the chicken pieces at the end of cooking until golden. Serve warm with your preferred dipping sauce.

Notes

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore their crispiness.
