Ingredients
  

  • 2 pounds ground chicken
  • ½ cup grated parmesan cheese
  • ½ cup dried breadcrumbs
  • 2 eggs eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons milk
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare a quarter-size baking sheet by lining it with foil. This will make cleanup a breeze later!
  2. In a large mixing bowl, combine the ground chicken, grated parmesan cheese, dried breadcrumbs, and eggs. Mix it gently with your hands until everything is just combined. Be careful not to overmix, as this can make the meatloaf dense.
  3. Add the chopped onion, minced garlic, milk, chopped parsley, dried oregano, worcestershire sauce, salt, and black pepper to the bowl. Mix again, ensuring all ingredients are well incorporated.
  4. In a separate small bowl, prepare the glaze by combining the ketchup, brown sugar, garlic powder, onion powder, and the additional salt. Stir until smooth and well blended.
  5. Shape the meat mixture into a loaf, approximately 9 by 5 inches, on the prepared baking sheet. It should look nice and rustic!
  6. Spread the glaze evenly over the top of the meatloaf. This will give it a beautiful, caramelized finish as it bakes.
  7. Carefully place the meatloaf in the preheated oven. Bake for about 55 to 60 minutes or until the internal temperature reaches 165°F (74°C). Keep an eye on its color; it should be nicely browned.
  8. Once done, remove the meatloaf from the oven and allow it to rest for 10 to 15 minutes. This resting period is crucial for keeping it juicy, as cutting too early can lead to dry slices.
