Ingredients
  

  • 2 lbs Boneless skinless chicken breasts cut or pounded to thin cutlets
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Olive oil
  • 4 oz Buffalo mozzarella sliced
  • 4 cloves Garlic pressed
  • 28 oz Crushed tomatoes 1 can
  • 1 tbsp Italian seasoning dried
  • 1/2 tsp Salt
  • 1/2 cup Heavy cream
  • 1/4 cup Parmesan cheese
  • 1/3 cup Fresh basil chopped

Method
 

  1. Start by mixing the garlic powder, salt, and pepper in a small bowl. Generously season each side of the chicken cutlets with this mixture for a flavor-packed experience. Make sure to coat them evenly.
  2. In a large skillet, heat the olive oil over medium-high heat. Wait until the oil is shimmering and hot. This step is crucial for achieving that lovely golden-brown crust on the chicken.
  3. Once the oil is hot, place the seasoned chicken cutlets into the skillet in a single layer. Avoid overcrowding the skillet; if you have too many, cook them in batches. Let them cook undisturbed for about 3 to 4 minutes.
  4. After browning one side, flip the chicken to brown the other side for another 3 to 4 minutes, or until cooked through. The outside should be beautifully golden, while the inside remains juicy. Once cooked, remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, add the pressed garlic and stir for about 30 seconds. You'll notice the aromatic scent filling the air. Be careful not to burn the garlic, as it can turn bitter.
  6. Next, pour the crushed tomatoes over the sautéed garlic and add the Italian seasoning. Stir to combine, then reduce the heat to medium. Allow the mixture to simmer for about 5 minutes, stirring occasionally. This short simmering time helps meld the flavors.
  7. After 5 minutes, stir in the parmesan cheese and heavy cream. Mix until combined and creamy. The sauce should be rich and comforting at this point.
  8. Add the chopped basil to the skillet for a fresh burst of flavor. Then return the cooked chicken to the skillet, covering it generously with the sauce. Simmer everything together for an additional 3 to 5 minutes until everything is heated through.
  9. Before serving, top each piece of chicken with a slice of mozzarella. Turn on the broiler and place the skillet in the oven for about 3 to 5 minutes. Watch closely until the mozzarella is melted and bubbly, turning golden brown.
  10. Once ready, garnish with additional fresh basil and serve hot. It’s delightful over pasta or alongside your favorite roasted veggies.
