Ingredients
  

  • 8 ounces Farfalle Pasta
  • 2 cups Cooked Chicken
  • 2 ounces Baby Spinach Leaves
  • 1 can Mandarin Oranges
  • 1/2 cup Dried Cranberries
  • 2 Green Onions
  • 1/3 cup Freshly Grated Parmesan Cheese
  • 1/3 cup Slivered Almonds
  • 2 tablespoons Olive Oil
  • 2 tablespoons Plain Greek Yogurt
  • 2 teaspoons Dijon Mustard
  • 3 tablespoons Honey
  • 1 Orange Zest
  • 1 Lemon Zest
  • 1/2 Orange Juice
  • 1/2 Lemon Juice
  • 1/2 teaspoon Fine Sea Salt
  • 1/8 teaspoon Freshly Ground Black Pepper

Method
 

  1. Make the dressing by combining the ingredients and whisking until smooth. Refrigerate until ready to use.
  2. Cook the pasta according to package directions. Drain and rinse with cold water.
  3. Assemble the salad by adding the pasta to a large bowl, followed by ¼ cup dressing and toss to combine.
  4. Add the chicken, spinach, mandarin oranges, cranberries, green onion, parmesan cheese, and toasted almonds to the bowl and toss.
  5. Drizzle additional dressing over the top and toss everything to combine. Serve immediately.

Notes

  • Meal Prep Instructions: Divide the dressing between four quart-size mason jars. Add pasta, chicken, other toppings, and add spinach last. Secure the lid and refrigerate for 3-5 days.
  • To Eat: Pour mason jar salad out into a bowl, and enjoy.
