  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large egg, lightly beaten
  • 1/4 cup plain breadcrumbs
  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil

Method
 

  1. In a large bowl, combine the ground chicken, chopped onion, minced garlic, beaten egg, breadcrumbs, parsley, Dijon mustard, salt, pepper, and paprika. Mix gently until all ingredients are well incorporated.
  2. Split the mixture into six equal portions. Shape each portion into a patty approximately 3/4-inch thick. Handle them carefully to maintain tenderness.
  3. Heat olive oil in a skillet over medium-high heat. Add the patties and cook for 5 to 6 minutes on each side until golden brown and the internal temperature registers at 165°F.
  4. Transfer the patties to a plate and serve warm with your favorite healthy sides or a fresh salad.
