In a medium nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat. As the oil heats, add the diced onion and minced garlic. Cook for about 3 to 4 minutes, stirring frequently until the onion is soft and translucent. Be careful not to burn the garlic as it can turn bitter. Once done, remove from heat and let it cool slightly.
In a large mixing bowl, combine the ground chicken, beaten egg, milk, bread crumbs, grated parmesan cheese, chopped parsley, Italian seasoning, salt, black pepper, and crushed red pepper flakes. Don't forget to add the cooled onion and garlic mixture. Mix everything well until fully combined. You can use your hands for the best mixing experience.
Now, it’s time to shape the patties. Divide the mixture into four equal portions for even cooking. Form each portion into an oval shape, about an inch thick, and place them on the prepared baking sheet. Drizzle the remaining olive oil over the patties to ensure they get that lovely golden color while baking.
Place the baking sheet in the preheated oven and bake for 13 to 15 minutes. Keep an eye on them; you want them to be golden brown on the outside and cooked through on the inside. You can check the center with a meat thermometer; it should read 165 degrees Fahrenheit.
While the patties are baking, stir together marinara sauce and tomato paste in a bowl. This mixture will serve as a flavorful topping for your patties.
Once the chicken patties are done baking, carefully remove them from the oven. Spoon the marinara mixture generously on top of each patty. Be generous; the sauce is a key flavor component!
Next, sprinkle the parmesan cheese and mozzarella cheese on top, aiming to pile it directly on the patties. Some cheese will undoubtedly ooze off, but that’s part of the charm. You want as much cheese to stay on the patties as possible.
Return the baking sheet to the oven and bake for an additional 4 to 5 minutes, just until the cheese is melted and bubbly. The aroma will be irresistible!
Once out of the oven, optionally sprinkle with more parsley for garnish before serving. The fresh herbs will enhance the dish's appearance and flavor.
