Ingredients
  

  • 1 tablespoon Olive oil
  • 1 pound Boneless, skinless chicken breasts cut into ¾-inch pieces
  • ½ onion Diced onion
  • 1 bell pepper Bell pepper any color, diced
  • 1 clove Garlic minced
  • 1 tablespoon Taco seasoning store-bought or homemade (½ packet)
  • ¼ cup Taco sauce store-bought or homemade
  • 4 tablespoons Unsalted butter divided
  • 4 large Flour tortillas
  • 2 cups Shredded Mexican cheese blend
  • Sour cream
  • Salsa
  • Guacamole
  • Jalapeño peppers
  • Fresh cilantro

Method
 

  1. Heat a tablespoon of olive oil in a large skillet set over medium heat. Once the oil is shimmering, add in the chicken pieces. Cook until the surface is no longer pink, stirring occasionally. This should take about 5 to 7 minutes. You don’t want to cook the chicken all the way through yet; it will finish cooking later with the other ingredients.
  2. Next, add in the diced onion and bell pepper. Continue to cook for another 5 minutes until the vegetables are softened and the chicken is fully cooked. The onion should be translucent, and the bell pepper will have a nice, bright color.
  3. Stir in the minced garlic, taco seasoning, and taco sauce. Cook for another 1 to 2 minutes. You should smell a wonderful aroma wafting through your kitchen at this point. Remove the skillet from the heat and set the filling aside in a bowl.
  4. Wipe out the skillet or grab a second one and set it over medium heat. Add in a tablespoon of unsalted butter and let it melt, coating the bottom of the pan.
  5. While the butter is melting, take one of the flour tortillas and sprinkle a generous handful of shredded Mexican cheese blend on one half of the tortilla. Top with a quarter of the chicken mixture and another handful of cheese. This layering will ensure every bite is cheesy and delicious.
  6. Fold the tortilla in half, pressing it down gently. Place it in the skillet and allow it to cook for about 2 to 3 minutes, or until the underside is golden brown and crispy.
  7. Carefully flip the quesadilla using a spatula. Cook for another 2 to 3 minutes until the second side is golden and the cheese has melted completely. Keep an eye on the heat; if it’s too high, the tortilla may burn before the cheese melts.
  8. Once cooked, remove the quesadilla from the skillet and place it on a cutting board. Let it cool for a minute before slicing it into wedges. This will help the cheese set slightly, making it easier to handle.
  9. Repeat the process with the remaining tortillas and filling. You can keep the finished quesadillas warm in the oven at a low temperature until you are ready to serve them.
  10. Serve your Chicken Quesadillas with a side of sour cream, salsa, guacamole, jalapeño peppers, and fresh cilantro for a tasty and enjoyable meal.

  • Tip 1: Watch the heat carefully and adjust it up or down as needed to ensure the tortilla gets a nice golden brown color and doesn’t burn.
