Ingredients

  • 2½ cups chicken breast diced and cooked
  • ⅔ cup mayonnaise
  • ⅓ cup celery finely diced
  • ¼ cup sweet yellow onion finely diced
  • ¼ cup green onion thinly sliced (plus 1½ tablespoons for garnish)
  • 1 teaspoon dill
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper fresh cracked

Equipment

  • Cutting Board
  • Wooden Spoon
  • Mixing Bowl
  • Chef's Knife

Method

  1. In a large mixing bowl, combine the diced chicken breast, mayonnaise, finely diced celery, finely diced yellow onion, and thinly sliced green onion. Stir well until all the ingredients are evenly mixed together. You want to ensure that the mayonnaise coats everything, giving it that creamy texture.
  2. Add in the dill, kosher salt, and black pepper. Mix again until all the ingredients are fully combined. At this stage, taste your mixture to see if any additional seasoning is needed. Adjust according to your taste preferences.
  3. Once everything is well combined, it’s time to serve! You can either enjoy your Chicken Salad immediately or refrigerate it until ready to serve. If you’re like me, letting it sit for a while allows the flavors to meld beautifully.
  4. If you’re serving it as a sandwich, take two slices of your favorite bread and spread about ½ cup of the Chicken Salad mixture onto one slice. Top it with the other slice and slice in half. It makes for a delightful lunch option.
  5. For a lighter option, serve it on a bed of crisp lettuce. This adds an extra crunch and freshness to each bite.
  6. Don’t forget to garnish your Chicken Salad with the reserved green onions before serving. This not only enhances the presentation but also adds a little extra flavor.
