- Start by placing the chicken in a large bowl or a ziplock bag. This is where it all begins! You want to ensure that the chicken is cut into even 1-inch cubes to allow for uniform marination and cooking.
- Next, in a separate bowl, whisk together the following ingredients to create the marinade: soy sauce, peanut butter, rice vinegar, lime juice, sesame oil, honey, grated ginger, minced garlic, crushed red pepper, and season with salt and pepper. Aim for a smooth consistency to ensure all the flavors blend nicely.
- Reserve a couple of tablespoons of this marinade for later use, then pour the remaining marinade over the chicken and make sure each piece is completely coated. This step is crucial for flavor absorption, so take a moment to massage the marinade into the chicken.
- Seal the bag or cover the bowl, and place the chicken in the refrigerator to marinate. Ideally, let it sit for at least 30 minutes, but if you have more time, marinate it overnight for maximum flavor.
- While the chicken is marinating, prepare the peanut dipping sauce. In a medium bowl, combine all the ingredients for the peanut sauce and whisk until smooth. Set it aside, allowing the flavors to meld. This sauce is essential for dipping your skewers!
- If you're using wooden skewers, soak them in warm water for about 30 minutes. This prevents them from burning and ensures that your chicken doesn’t stick.
- Once the skewers are ready, thread the marinated chicken pieces onto them, about five pieces per skewer. Make sure not to overcrowd the skewers to allow for even cooking.
- Spray the grill grates with non-stick spray to prevent sticking and place the skewers on the grill. Cook them for about 5 to 6 minutes on each side, brushing with the reserved marinade. This step will give the skewers a beautiful glaze and enhance their flavor.
- Check for doneness using a meat thermometer; the internal temperature should reach 165 degrees F. Once fully cooked, remove the skewers from the grill.
- Top the skewers with fresh cilantro and green onions for added freshness and color. Finally, drizzle some of the peanut sauce over the top or serve it on the side for dipping. Enjoy!
