Ingredients
  

  • ¼ cup olive oil
  • 2 whole lemons (juiced)
  • 3 cloves garlic (minced)
  • teaspoons shawarma seasoning (such as McCormick)
  • pounds boneless, skinless chicken thighs
  • 6 pitas
  • 1 tomato (sliced)
  • 1 cucumber (sliced)
  • ½ red onion (sliced)
  • 1 cup sliced red cabbage
  • ½ cup tzatziki dip

Method
 

  1. In a large bowl, whisk together olive oil, the juice of 2 lemons, and garlic until combined. This will be your marinade. The aroma will start to waken your senses, making you excited for what's to come!
  2. Add in the shawarma seasoning and whisk again. This will give your marinade that incredible flavor profile unique to Chicken Shawarma. Don't be afraid to taste it and adjust the flavors as you like!
  3. Now it’s time to add the chicken thighs. Toss them in until they’re well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or up to 12 hours for maximum flavor!
  4. When you're ready to cook, preheat your oven to 425°F (220°C). Preheating is crucial for that beautiful roast on the chicken.
  5. Spread the marinated chicken out on a greased baking sheet. If necessary, use two sheets to ensure even cooking. Bake for 25 to 30 minutes. You’ll know it's done when the edges of the chicken are slightly charred and the juices run clear.
  6. Once out of the oven, let the chicken rest for a few minutes. This step is important; it allows the juices to redistribute, keeping your chicken moist.
  7. After resting, slice the chicken into small strips. This will ensure easy wrapping and a delightful bite every time.
  8. Now it’s time to assemble your wraps! Start with a warm pita, layer on some chicken, then add tomato, cucumber, red onion, red cabbage, and a generous dollop of tzatziki dip.
