Ingredients
  

  • 2 pounds chicken bones you can use backs, wings, and other leftover trimmings
  • 1 onion quartered
  • 2 celery stalks
  • 2 carrots peeled, and quartered
  • 1 bunch of parsley if desired

Method
 

  1. Place the chicken into a large stockpot.
  2. Place the vegetables on top of the chicken.
  3. Cover with water.
  4. Gently heat the stock, do not allow the stock to boil.
  5. Cook for about 3 hours on low.
  6. Strain the stock, and return the liquid to the pot.
  7. Reduce the liquid in half.
  8. Use the remaining liquid as base.
