Ingredients

  • 6 cups popcorn already popped
  • ½ cup white chocolate drops
  • ¼ cup pistachios chopped
  • ¼ cup dried cranberries
  • ¼ cup freeze-dried raspberries crumbled

Equipment

  • Wooden Spoon
  • Chef's Knife

Method

  1. Line a rimmed baking tray with baking paper / parchment paper.
  2. Spread the popped popcorn over the lined baking sheet.
  3. Melt the white chocolate, I do this in the microwave. I microwave the white chocolate in a microwave proof bowl on high power for 30 second bursts, stirring between each burst until melted.
  4. Drizzle the chocolate over the popcorn
  5. Sprinkle the chopped pistachios, crumbled freeze-dried raspberries, and dried cranberries over the white chocolate drizzled popcorn. Leave the popcorn to rest until the white chocolate has cooled and hardened.
  6. Break up the popcorn into bite-sized pieces, transfer into a serving bowl, or store in an airtight container until you are ready to serve your Christmas Popcorn.

Notes

  • Pop popcorn kernels: Follow the instructions on the pack or use my microwave popcorn method.
  • Cooling Tip: Make sure your popcorn is fully cool before making this recipe; if it is still warm, the white chocolate will not set well.
  • Gift Idea: Fill a glass jar with the finished popcorn, add a ribbon and you have got a lovely gift.
