Ingredients

  • 1 cup tomato sauce
  • 1 pound ground beef
  • 1 can mushrooms
  • 1/4 cup chopped bell pepper
  • 1/2 cup cracker crumbs
  • 1/2 cup chopped onion
  • 1/2 teaspoon oregano
  • to taste salt and pepper
  • 1 3/4 cups Minute Rice
  • 12 ounces tomato sauce
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese

Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowl
  • Chef's Knife
  • Frying Pan

Method

  1. Preheat your oven to 350°F. This is an essential step to ensure even cooking and a perfectly baked pie.
  2. In a large mixing bowl, combine all the crust ingredients: cracker crumbs, salt, and any additional herbs you like. Mix well until all the crumbs are evenly coated. Pat the mixture into a pie pan, making sure to cover the bottom and up the sides. This will create a sturdy base for your pie.
  3. Next, focus on making the filling. In another bowl, combine the Minute Rice, tomato sauce, water, salt, and one cup of the cheddar cheese. Stir everything together until the rice is fully coated with the sauce.
  4. Pour the rice and sauce mixture into the prepared crust. Spread it evenly, making sure it reaches all corners of the pie.
  5. Cover the pie with foil to retain moisture while baking. This helps the rice cook thoroughly without drying out.
  6. Place the pie in the preheated oven and bake for 30 minutes. The aroma should start filling your kitchen, creating anticipation.
  7. After 30 minutes, carefully remove the foil. You’ll see the filling is bubbling and the crust is set. Sprinkle the remaining cheddar cheese over the top of the pie for that delightful cheesy goodness.
  8. Return the pie to the oven, uncovered, and bake for an additional 10 to 15 minutes. Keep a close eye on it; you want the cheese to melt and bubble beautifully, turning a lovely golden brown.
  9. Once done, remove the pie from the oven and let it cool for a few minutes before slicing. This will help it set and make serving easier. Enjoy!

Notes

Leftover pie can be stored in the fridge for up to three days. Just cover it tightly with plastic wrap or foil to keep it fresh. This pie freezes well! You can freeze an unbaked pie for up to three months. Just cover it tightly and bake from frozen, adding extra time. Serve the Country Beef Pie with a fresh garden salad or steamed vegetables to balance the richness of the dish. Feel free to add your favorite herbs like thyme or rosemary for extra flavor. If you want to change it up, try different types of cheese, like mozzarella or pepper jack, for a unique twist.
