Ingredients
  

  • 1 can black beans rinsed and drained
  • 1 can black-eyed peas rinsed and drained
  • 2 cans white shoepeg corn (or substitute 2 cups fresh, raw sweet corn kernels)
  • 1 jar chopped pimentos drained
  • 1.5 cups diced green pepper
  • 1.5 cups thinly sliced green onion
  • 1 cup diced celery
  • 1 cup chopped cilantro
  • 2 tablespoons minced jalapeno (more or less to taste)
  • 1 teaspoon minced garlic (use more if desired)
  • 0.5 cup vegetable oil
  • 0.5 cup rice vinegar
  • 0.5 cup sugar
  • 2 tablespoons freshly squeezed lime juice (use more if desired)
  • 1 teaspoon Morton kosher salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon cumin

Method
 

  1. In a large bowl, fold together all salsa ingredients.
  2. Add all dressing ingredients to a jar or bowl, then add a tight-fitting lid. Shake the jar vigorously for 30 seconds to combine.
  3. Pour dressing over salsa ingredients and fold a few times to combine.
  4. Cover and refrigerate for at least 1 hour, and up to 1 day in advance.
  5. Before serving, fold the salsa a few times to combine.
  6. If desired, drain off some of the excess dressing and accumulated juices.
  7. Serve with your favorite tortilla chips or Fritos corn chips.
  8. You can also serve this as a relish or side salad.

Notes

  • Uniform Dicing: When dicing the vegetables, aim for all ingredients in the salsa to be roughly the same size.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 4 days.
  • Customization: Feel free to customize the recipe by adding your favorite ingredients, such as chopped tomatoes or avocado.
