- Preheat your oven to 375°F. The right temperature is essential for a perfectly baked pie. As your oven heats, grab a 9.5-inch pie plate and spray it with nonstick cooking spray. If you have a 9-inch plate, that works too, but don’t go any smaller.
- In a large bowl, beat butter until it’s smooth and creamy using a hand mixer. You’ll want it to be light and fluffy, which should take about 1 to 2 minutes.
- Mix in the granulated sugar, egg, salt, and baking powder until fully combined. This mixture should be smooth and slightly airy, giving your crust a lovely texture.
- Next, add the water and flour to the bowl. Mix until everything is well combined, and the batter is smooth. It should be thick but spreadable.
- In a separate bowl, sprinkle the sugar, cinnamon, and cornstarch over the thawed berries. Gently toss them to coat, ensuring that each berry gets a touch of sweetness and thickener.
- Pour the prepared crust batter into your pie plate, spreading it evenly across the bottom. This is your base, so make sure it’s nice and smooth.
- Now, it’s time to add the berries. Place them in the center of the crust batter, aiming for a single layer. Leave about a 1-inch border around the edge, where the crust will rise.
- Carefully place the pie in the preheated oven and bake for 45 to 55 minutes. You’re looking for a golden brown top. A toothpick inserted into the edges should come out clean, although the center might still look slightly wet due to the juicy berries.
- Once baked, remove the pie from the oven and let it cool completely. This allows the filling to set up a bit. You can serve it warm, but I often prefer to let it sit for a few hours for the best flavor.
