Ingredients
  

  • 2 medium zucchini cut in slices or half-moon slices
  • 2 medium yellow squash cut in slices or half-moon slices
  • 4 tablespoons chopped fresh basil more or less, depending on how much you like the flavor of basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese (see notes)
  • 1/2 cup coarsely grated Parmesan plus a little more for the top if desired
  • salt to taste
  • fresh ground black pepper to taste

Method
 

  1. Preheat your oven to 350F/180C. While your oven heats up, grab an 8" x 8" or 8" x 11" baking dish and lightly spray it with olive oil or non-stick spray.
  2. Next, wash the zucchini and yellow squash. Slice them into thin slices or half-moon shapes.
  3. Take your fresh basil, wash it gently, and then spin it dry or pat it with paper towels. Finely chop or slice the basil.
  4. Now, grab the green onions and slice them thinly.
  5. In a large mixing bowl, combine the sliced zucchini, yellow squash, chopped basil, sliced green onions, dried thyme, garlic powder, half of the mozzarella, and half of the Parmesan. Stir everything together gently until the veggies are coated with the cheeses and herbs.
  6. Season the mixture with salt and fresh ground black pepper to taste.
  7. Carefully transfer the mixture into the prepared baking dish, spreading it out evenly. Place it in the oven and bake uncovered for about 25 to 30 minutes, or until the zucchini is mostly tender.
  8. Once the zucchini is nearing doneness, take the dish out of the oven and sprinkle the remaining mozzarella on top, along with any extra Parmesan if desired.
  9. Return the dish to the oven and bake for an additional 10 to 15 minutes.
  10. When it’s ready, serve the Easy Cheesy Zucchini Bake hot from the oven.
