- Begin by adding the tahini and lemon juice to the canister of your food processor or a blender. Blend these ingredients on high power for about 90 seconds. You want the mixture to become smooth and fluffy, creating a delightful base for your hummus.
- Next, add the garlic to the mix and process for about 1 minute. You’ll start to notice the aromatic scent of the garlic filling the air, which is a sure sign that your hummus is coming together.
- Now it’s time to incorporate the olive oil, cumin, paprika, salt, and black pepper to taste. If you enjoy a bit of spice, feel free to add a pinch of cayenne pepper as well. Blend these ingredients until they are well combined.
- With the processor still running, add the garbanzo beans gradually. Process just long enough to achieve your preferred texture. Remember, it’s okay to retain a bit of texture; I usually blend for less than 1 minute.
- As you blend, you may need to drizzle in the reserved bean liquid to reach your desired consistency. The hummus should be creamy but not too thick, so adjust as needed.
- Once everything is blended, stop and taste your hummus. This is the fun part! Make any necessary tweaks by adding more salt, lemon juice, or spices to suit your palate.
- Transfer the finished hummus to a serving bowl. Don’t forget the finishing touches! Garnish with a sprinkle of pico de gallo and drizzle with olive oil. You can also add a sprinkle of smoked paprika and fresh cilantro for a vibrant presentation.
- Serve your Easy Mexican Inspired Hummus immediately with your favorite dippers, or if you prefer, cover and chill for about an hour before serving. Hummus is best fresh but will stay fresh in an airtight container in the fridge for up to 5 days.
