Ingredients
  

  • 1 cup Feta cheese
  • 1 One egg
  • 1 tablespoon Everything bagel seasoning
  • 1 tablespoon Chopped fresh parsley
  • 1 One flour tortilla Warmed: The perfect base to serve your feta fried egg on.

  • Nonstick skillet

Method
 

  1. Preheat your skillet: Start by heating a nonstick skillet over medium-high heat. Wait until it's hot enough for cooking.
  2. Add the feta cheese: Place a ring of crumbled feta cheese in the center of the skillet. The ring does not have to be perfect. Use as little or as much as you want, but pay attention that the center isn't too large.
  3. Crack the egg: Carefully crack an egg into the center of the feta cheese ring.
  4. Season: Generously sprinkle everything bagel seasoning over the egg. Be careful not to add salt, as feta is already salty.
  5. Cover and cook: Place a lid on the skillet and let it cook for 2-3 minutes until the cheese is golden and the egg is cooked to your desired doneness.
  6. Serve: Slide the feta fried egg onto a warm flour tortilla or serve over hashbrowns. Garnish with chopped fresh parsley.

Notes

  • Tip 1: Store leftover cooked eggs in an airtight container in the fridge for up to two days.
  • Tip 2: While I don’t recommend freezing the dish, you can pre-mix the feta and seasoning and freeze it.
