Ingredients
  

  • 2 1/2 lbs Yukon gold potatoes peeled and diced into 1 1/2-inch portions
  • Salt and freshly ground black pepper
  • 6 Tbsp butter divided
  • 4 cloves garlic finely minced
  • 3 - 4 Tbsp half and half
  • 1/2 cup parmesan cheese (slightly packed) finely shredded
  • 4 large egg yolks
  • Minced fresh parsley for garnish (optional)
  • Finely grated parmesan for serving (optional)

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Add the potatoes to a large pot, covering them with cold water. Season with 1 tablespoon of salt, ensuring the potatoes are submerged by about 1 to 2 inches. Bring to a boil over medium-high heat, then reduce to medium-low. Cover the pot with a lid and let the potatoes simmer until very tender, about 15 to 20 minutes. They should nearly fall apart when pierced. Once cooked, drain well.
  3. While the potatoes are cooking, dice 4 tablespoons of the butter into 1 tablespoon pieces and add them to a small saucepan. Melt the butter over medium heat, then add the minced garlic. Sauté for about 1 to 2 minutes until the garlic is lightly golden and softened. Be careful not to burn the garlic.
  4. Remove the saucepan from heat, stir in 3 tablespoons of the half and half, and pour the mixture into a small bowl. This prevents the garlic from cooking further while you prepare the potatoes.
  5. Transfer the drained potatoes to a large mixing bowl. Use a potato masher to mash them well until there are no lumps. You could also use a potato ricer for an extra smooth texture.
  6. Stir in the finely shredded parmesan cheese and the warm butter-garlic mixture with a wooden spoon. Season the mixture with salt and pepper to taste. This step is crucial for flavor.
  7. Let the mixture cool for a few minutes, then quickly stir in the egg yolks, one at a time, using the wooden spoon. If the mixture seems very thick, you can add the remaining 1 tablespoon of half and half to loosen it.
  8. Transfer the potato mixture to a large piping bag fitted with a large star tip about 3/4 inch wide. Pipe the mixture into 12 mounds spaced evenly apart on the baking sheet, about 2 1/2 inches wide by 2 1/2 inches tall. If you don’t have a piping bag, you can simply spoon mounds onto the sheet.
  9. Gently brush the tops of each mound with the remaining 2 tablespoons of melted butter. This will give them a beautiful golden color when baking.
  10. Place the baking sheet in the preheated oven and bake the potatoes for about 16 to 19 minutes, or until they are golden brown on top. Once done, serve immediately, garnished with minced fresh parsley and additional finely grated parmesan if desired.
