Ingredients

  • 1 can mandarin oranges
  • 1 can pineapple chunks
  • 1/2 pound fresh strawberries
  • 3 units kiwi fruits
  • 1 unit mango
  • 1/2 cup honey
  • 1/4 teaspoon ground ginger
  • 1/2 unit fresh lemon
  • optional marshmallows

Equipment

  • Whisk
  • Food Processor
  • Chef's Knife
  • Mixing Bowl

Method

  1. Drain mandarin oranges and pineapple chunks, no need to reserve juice.
  2. Add mandarin oranges, pineapple, strawberries, kiwi, and mango to a large mixing bowl and mix well.
  3. Add honey, juice of lemon, and (optional) ginger. Whisk well.
  4. Pour dressing over fruit and mix well.
  5. Refrigerate for 2 hours or overnight for flavors to mingle. The fruit will let off a bit more juice during the cold process. Mix well before serving.
  6. Store fruit salad covered in the refrigerator and serve or pack in small individual jelly size mason jars.

Notes

  • Tip 1: For the lemon, squeeze the juice into the salad by hand to avoid seeds.
  • Tip 2: Spray your measuring cup with nonstick cooking spray before measuring honey.
  • Tip 3: Serve over vanilla pudding, granola, yogurt, or even ice cream!
  • Tip 4: Ginger is strong; start light and adjust to taste.
