Ingredients

  • 1/3 cup grass-fed butter or coconut oil
  • 2 tablespoons almond butter
  • ½ cup maple sugar see note
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups almond flour 192g
  • 2 tablespoons coconut flour 14g
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sprinkles plus more for garnish

Equipment

  • Whisk
  • Baking Sheet
  • Oven
  • Frying Pan

Method

  1. Preheat your oven to 350ºF (175ºC). Prepare an 8-inch baking dish by greasing it with a little butter or oil and lining it with parchment paper, allowing some overhang for easy removal later. This ensures your blondies won’t stick, making for a clean extraction.
  2. In a small saucepan over low heat, add butter and almond butter. Stir them together until melted and combined, then remove from heat. Allow this mixture to cool slightly—this step is essential as it prevents the egg from scrambling when added later.
  3. In a large mixing bowl, combine maple sugar, egg, and vanilla extract. Whisk vigorously until everything is well combined and a bit frothy. This process will introduce air, helping to create a light texture.
  4. Gradually pour the melted butter mixture into the egg mixture while continuously whisking. This technique helps to incorporate the fats smoothly, ensuring a homogenous batter.
  5. Next, add in the almond flour, coconut flour, baking powder, and salt. Mix gently with a spatula or wooden spoon until just combined. Be careful not to overmix; you want a thick batter that holds together well.
  6. Now it’s time to fold in the colorful sprinkles. Gently mix them into the batter, ensuring they are evenly distributed throughout, which will create that fun appearance once baked.
  7. Transfer the thick batter into your prepared baking dish. Using a spatula, press the batter down evenly to fill the pan and smooth out the top. Add a few extra sprinkles on top for a pop of color.
  8. Place the baking dish in the oven and bake for 18 to 20 minutes. Keep an eye on them; they should become slightly puffed and golden around the edges. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Remove the blondies from the oven and let them cool slightly in the pan for about 10 minutes. Once set, use the parchment overhang to lift them out and transfer to a wire rack to cool completely.
  10. When cool, cut the blondies into 9 square portions. Enjoy these delightful treats as they are, or store them for later. Don’t forget to keep some in the refrigerator for a sweet snack anytime!

Notes

  • Tip 1: Keep your blondies in an airtight container at room temperature for up to one week. For longer freshness, refrigerate them for up to two weeks.
  • Tip 2: Yes, you can freeze these blondies! Wrap each square individually in plastic wrap and store them in a freezer-safe bag for up to three months.
  • Tip 3: These blondies pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
  • Tip 4: Cutting them into smaller squares can make for perfect bite-sized treats—great for sharing!
  • Tip 5: Consider swapping out the sprinkles for dried fruits or nuts for a different texture and flavor profile.
