Ingredients
  

  • 1/4 cup olive oil
  • 1/2 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1 teaspoon dried parsley
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 1/2 pounds Yukon Gold potatoes
  • 1 pound fresh green beans

Method
 

  1. Begin by preheating your oven to 400°F. Line a large sheet pan with parchment paper, or spray with cooking spray. Set aside.
  2. In a large mixing bowl, add the olive oil and all the seasonings. Mix to combine.
  3. Peel, and cut the Yukon Gold potatoes into medium sized cubes. Add the potato cubes to the large mixing bowl. Toss the potatoes so they’re coated in the oil.
  4. Transfer the potatoes from the bowl, to the sheet pan, leaving some of the seasoned oil in the bowl. Spread the potatoes out so they aren’t touching and place them in the oven to bake for about 15 minutes.
  5. In those 15 minutes, wash, dry and cut the green beans. Add them to the bowl with the olive oil mixture and toss to combine.
  6. When the 15 minutes are up, remove the sheet pan from the oven. Add the green beans to the sheet pan with the potatoes and spread them out so they aren’t touching. Place this back in the oven, and bake for 15-20 more minutes. Remove from the oven once the potatoes and green beans are cooked through. Serve hot and enjoy!

Notes

  • Storage: You can store the leftover potatoes and green beans in the fridge, in an airtight container for 2-3 days. To reheat, you can microwave them, or pop them back in the oven at 400°F until warmed through.
