- In a large skillet, heat the olive oil and sauté the garlic and red onion until tender. Stir in the fresh green beans. Add the juice of one large lemon and stir again. Place a lid on the skillet and cook the green beans until tender, about five minutes. Make sure you stir the beans at least once.
- Pour the green beans into a bowl or onto a serving platter. Top with feta cheese and season with salt and pepper. Serve warm.
Notes
- Storage: To store leftovers, place them in an airtight container in the refrigerator. They should stay fresh for up to three days.
- Freezing: You can freeze cooked green beans for later use. However, the feta cheese doesn't freeze well; add it fresh when serving.
- Pairing: This dish pairs wonderfully with grilled meats, pasta, or can even stand alone as a light lunch.
- Variations: Add in some cherry tomatoes or olives for extra flavor and color.
