- Start by whisking together the olive oil, lemon juice, minced garlic, salt, and pepper in a bowl.
- Add the diced onion to the marinade.
- Next, place the chicken breasts in a gallon-sized zip-top bag. Pour the marinade over the chicken, making sure each piece is evenly coated.
- Allow the chicken to marinate in the refrigerator for at least one hour, but for the best flavor, let it sit overnight.
- When you’re ready to cook, preheat your grill to medium-high heat.
- Remove the chicken from the marinade and let any excess marinade drip off. Sprinkle the chicken with additional pepper for an extra kick of flavor.
- Place the chicken on the preheated grill.
- Cook for about 20 minutes, flipping halfway through.
- Once cooked, remove the chicken from the grill and allow it to rest for a few minutes before slicing.
