Ingredients

  • 4-6 pieces Chicken Breasts boneless, skinless
  • 1 cup Olive Oil
  • 2/3 cup Lemon Juice
  • 2 teaspoons Minced Garlic
  • 1 medium Onion diced
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Salt

Equipment

  • Whisk
  • Chef's Knife
  • Cutting Board

Method

  1. Start by whisking together the olive oil, lemon juice, minced garlic, salt, and pepper in a bowl.
  2. Add the diced onion to the marinade.
  3. Next, place the chicken breasts in a gallon-sized zip-top bag. Pour the marinade over the chicken, making sure each piece is evenly coated.
  4. Allow the chicken to marinate in the refrigerator for at least one hour, but for the best flavor, let it sit overnight.
  5. When you’re ready to cook, preheat your grill to medium-high heat.
  6. Remove the chicken from the marinade and let any excess marinade drip off. Sprinkle the chicken with additional pepper for an extra kick of flavor.
  7. Place the chicken on the preheated grill.
  8. Cook for about 20 minutes, flipping halfway through.
  9. Once cooked, remove the chicken from the grill and allow it to rest for a few minutes before slicing.
  10. Finally, slice the Grilled Lemon Pepper Chicken and serve with your favorite sides.

Notes

Keep leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the grill to maintain flavor.
