Ingredients
  

  • 6 firm, ripe peaches
  • 2 shallots peeled
  • 1 red bell pepper seeds removed
  • 2 teaspoons oil
  • 1 clove garlic minced
  • 1-2 chipotle peppers canned in adobo sauce
  • 2 tablespoons chopped cilantro
  • 1 lime
  • 1 tablespoon honey if needed
  • Salt and pepper

Method
 

  1. Preheat your grill to medium heat. This ensures that the fruits and vegetables get the right amount of char without burning.
  2. Cut each peach into 4 thick slices, being careful not to cut them too thin as you want them to hold up on the grill.
  3. Slice the shallots in half and cut the red bell pepper into quarters. The pieces should be large enough to stay intact during grilling.
  4. Lay the slices of peach, shallots, and quarters of red bell pepper on a baking sheet. Drizzle with a little oil and toss to coat evenly. This will help them grill nicely.
  5. Carefully place the prepared peach, shallots, and red bell pepper on the grill. You should hear a satisfying sizzle as they hit the heat.
  6. Grill the peaches for 1 to 2 minutes per side until they develop beautiful grill marks but are still firm to the touch. Shallots and peppers need a bit longer; grill them for about 2 to 4 minutes per side.
  7. Once everything is grilled to perfection, remove them from the grill and allow them to cool slightly. The aroma should be heavenly!
  8. Chop the grilled peaches, shallots, and red bell pepper into small 1/4-inch chunks and place them into a mixing bowl. The colors should be vibrant and inviting.
  9. Mince the chipotle peppers, then add them to the bowl along with the minced garlic, chopped cilantro, the juice of 1 lime, and honey if needed. This mixture will bring everything together beautifully.
  10. Mix well and season with salt and pepper to taste. Adjust the seasoning according to your preference. If you want a “saucier” salsa, you can puree half the peaches with the lime juice and then mix it with the rest.
