In a small bowl or measuring cup, combine the soy sauce, BBQ sauce, maple syrup, garlic, and ginger. Stir well and set aside.
Set a large skillet or wok over medium/high heat and add a tablespoon of oil. Once hot, add the ground beef, breaking it up with a spatula. Sauté for about five minutes or until it's fully cooked through and lightly browned. Transfer the beef to a separate bowl, keeping any oil in the pan.
In the same skillet, add a bit more oil if necessary. Toss in the sliced zucchini, mushrooms, and carrot. Sauté for 2 to 3 minutes, stirring frequently, until the zucchini is half done yet crunchy. It’s essential not to overcook them; they should still have some bite.
Return the cooked ground beef to the pan. Pour in the sauce you prepared earlier and stir to combine. Cook for an additional two minutes, stirring occasionally.
Taste your stir fry and adjust with salt and pepper as needed. Once satisfied, remove from heat.
Serve your stir fry over freshly cooked rice or in crunchy lettuce cups. Garnish with chopped chives or green onions if desired. Enjoy!
