Ingredients

  • 1 medium to large avocado
  • ½ cup water more as needed
  • ¼ cup olive oil
  • 3-4 tablespoons lemon juice
  • 1 cup picked herbs see note
  • 1 teaspoon tarragon
  • 1 clove garlic
  • ½ teaspoon salt more to taste

Equipment

  • Blender

Method

  1. Start by preparing your ingredients. Gather the ripe avocado, water, olive oil, lemon juice, and your selection of fresh herbs. Make sure your avocado is ripe; it should give slightly when gently pressed. This ensures a creamy texture in your dressing.
  2. Next, cut the avocado in half and remove the pit. Scoop the flesh into your blender. The avocado is the star ingredient, so don’t skimp on this part!
  3. Add the olive oil into the blender next. This will help create that luscious consistency we're after. Choose a high-quality extra virgin olive oil for the best flavor.
  4. Now it’s time for the lemon juice. Squeeze fresh juice directly into the blender. This will brighten the flavors and keep the dressing from browning too quickly.
  5. Grab your picked herbs and pack them tightly into a measuring cup. This dressing shines with fresh herbs, so feel free to mix and match based on your preferences!
  6. Add in the garlic clove (you can chop it roughly if you want to help it blend better) and tarragon for that unique touch. The flavors will meld beautifully as they blend.
  7. Finally, sprinkle in the salt. This enhances all the flavors, so don’t skip this step, but adjust according to your taste. You can always add more later!
  8. Now, secure the lid on your blender and blend on high until everything is smooth and creamy. Stop to scrape down the sides if needed. If the mixture is too thick, gradually add more water a tablespoon at a time until it reaches your desired consistency.
  9. Taste your dressing and adjust the seasoning. If you'd like it tangier, add a bit more lemon juice. If you want it saltier, go ahead and sprinkle in a little more salt.
  10. Once you're happy with the flavor and texture, transfer it to a jar or a container for storage. You can store this dressing in the refrigerator for up to a week. Enjoy it on salads, sandwiches, or as a dip!

Notes

  • Tip 1: Keep leftovers in an airtight container in the fridge for up to one week.
  • Tip 2: Store in an airtight container in the fridge. Stir well before using, as separation may occur.
  • Tip 3: You can freeze the dressing in an ice cube tray for easy portioning. Just thaw whenever you need a quick dressing!
  • Tip 4: Fresh herbs are essential for the best flavor. Dried herbs won't provide the same vibrant taste.
  • Tip 5: Adjust the thickness by using less water for a thicker dressing.
